A great way to use your chicken. Home made Pesto is delicious but shop bought can be just as good! Check bargain & discount stores for jars, I got a well known brand for 99p!
Serves 2 (easily doubled) Approx 66p per person (not inc chicken)
Prep 10 minutes Cooking 20 minutes
Ingredients
150g dried pasta (penne is good)
100g cooked chicken, shredded
½ onion, sliced
60g cheddar, finely grated
a handful cherry tomatoes, quartered
a handful breadcrumbs
½ jar green pesto
Cook the pasta in boiling salted water.
Fry the onion in a little oil until soft.
Reserve some of the pasta water then drain & return to the pan.
Add the onion, chicken, tomatoes, pesto & 1/3 of the cheese to the pasta along with enough of the pasta water to make it nice & smooth & mix well.
Transfer to an ovenproof dish & cover with foil.
Cook in the oven 200C/180Fan/Gas6 for 10 minutes then remove & take off the foil. Mix the remaining cheese with the breadcrumbs & sprinkle evenly over the pasta.
Place back in the oven for another 10 minutes or until the topping is golden.
Serve.
