This is my version of the Creole stew so not exactly authentic but it is delicious! Two chicken breasts will easily serve six people as it is sliced into strips & the sausage helps to bulk it out too. Serve with rice or crusty bread.

Prep time 10 minutes Cooking time 8 hours on low setting
Ingredients
2 skinless chicken breasts, sliced into strips
1 smoked pork sausage, sliced
2 green peppers, sliced into strips
1 onion, sliced
2 tbsp plain flour
1 tsp garlic powder (or 2 cloves of fresh garlic crushed)
1/2 tsp cayenne pepper
1/2 tsp ground black pepper
1 heaped tsp dried oregano
1 heaped tsp dried basil
1 tsp salt
600ml chicken stock
Mix together the flour & seasonings (if you are using fresh garlic add it in with the other ingredients).
Put the chicken into a bowl, add the seasoned flour & a good pinch of salt. Toss well to make sure the chicken gets well coated.
Put the peppers, onions, sausage & chicken into the slow cooker dish. Pour over the stock & stir well.
Put on the lid & set the timer to 8 hours on low.
Serve with rice or crusty bread.
