Flavoured Butter

There are so many possibilities here! I have listed a few but it is the kind of recipe where you can use your imagination & go with your own favourite flavours.

Make sure the butter is fairly soft before you add to it.

100g unsalted butter costs approximately 60p but you can use more if you want to make a bigger batch.

Spiced Butter

 

Ingredients

100g soft unsalted butter

1 tsp each of ground cumin, ground coriander, paprika

1/2 tsp garlic powder

1/4 tsp cayenne pepper

pinch of salt

Mix together the spices in a small bowl. Put the butter into a bigger bowl & mash with a fork to make sure it is nice & soft.

Add the spices & a pinch of salt & mix well.

Lay a sheet of cling film on to your worktop & tip the butter into the middle.

Lift up the edge of the cling film nearest to you & bring it over the butter. Press it down gently & shape the butter into a sausage.

Roll it up & twist the ends of the cling film.

Put the butter in the fridge until you need to use it.

 

 

Try using this butter on a whole chicken before roasting. Pat the chicken dry & smear the butter generously all over the skin & under the skin if you can.

 

 

Cover tightly with foil & cook for about 45 mins- 1 hour then remove the foil & cook for a further 45 mins-1 hour (depending on the weight of your chicken).

Allow to rest then either slice or shred & serve with traditional roast potatoes or for a change with flatbreads.

Garlic & Parsley Butter

 

 

Ingredients

100g soft unsalted butter

2-3 cloves garlic, crushed

2 tbsp finely chopped parsley

Put all the ingredients into a bowl & mix until fully combined

Place the butter on to a sheet of cling film & roll it up into a sausage. Twist the ends of the cling film to secure it & place it in the fridge until ready to use.

Make your own garlic bread!

Take a part baked baguette & make some cuts approximately 3cm apart but not all the way through.

Put slices of the garlic butter into the cuts & put the baguette in some foil & on to a baking tray.

Cook according to the instructions on the packet.
