Ready in under half an hour, I'm betting your local takeaway can't do it any quicker-or cheaper!!
Serves 4, approx 75p per person

Ingredients
200g Basmati rice, use loose or boil in the bag
200g prawns, frozen or fresh
1 onion, chopped or a bunch of spring onions, chopped
3 cloves garlic, chopped
3 medium eggs, beaten
200g frozen peas, defrosted
pinch of chilli flakes
Cook the rice according to pack instructions , drain then set aside.
Heat some oil in a large frying pan & cook the prawns for 1 minute until just pink. Remove from the pan & set aside.
Fry the onion in a little more oil until soft, then add the garlic & chilli flakes & cook for another few minutes.
Pour the eggs into the pan, let them start to set then stir to break them up.
Add the rice to the pan & quickly mix together then stir in the peas & prawns.
Serve.
This would be great with chicken too!
