Inspired by a recent pub meal, these burgers are a nice change from the usual beef burger. I used Aldi naan breads which are a nice size & not too big. Two chicken breasts easily serves 4 & don't worry if the mixture feels a little sloppy I promise it will hold together!

Ingredients
2 chicken breasts, roughly chopped into chunks
100g tikka paste (approx 1/2 a small jar)
pinch of salt
4 naan breads
For the salad:
2 tomatoes, deseeded & chopped
1 small red onion, finely chopped
1/2 tsp dried coriander
Place the chicken, tikka paste & a pinch of salt into a food processor & whizz until mixed. Transfer to a shallow bowl, the mixture will feel quite sloppy but it should be fine to handle. Form the chicken mixture into 4 patties & place them on a plate & chill them in the fridge until ready to cook.
Meanwhile make the salad.
Place the chopped tomato & onion into a bowl with the dried coriander & a pinch of salt. Mix together then cover with cling film & place in the fridge until ready to serve.
Heat the oven to 200C/Fan 180/ Gas 6
Remove the burgers from the fridge & place onto a baking tray. Cook in the oven for 20 minutes, turning halfway through. Warm the naan breads in the oven for about 5 minutes.
To serve place one burger onto a naan bread & fold over, add salad & mint yoghurt sauce first if you wish.
