I have taken my Credit Crunch Cookie recipe & made them taste like Christmas by adding orange zest & mixed spice! Make the dough a few weeks ahead & freeze to save time when the festivities start.
Makes 14 biscuits (approx) at about 11p each
Prep time 10 minutes plus 1 hour chilling time Cooking time 10 minutes

Ingredients
175g unsalted butter, softened
85g caster sugar
200g plain flour
grated zest of 1 large orange
11/2 tsp ground mixed spice
Heat the oven to 180C/160Fan/Gas 4.Mix the butter & sugar together with a fork.
Stir in the flour, the orange zest & mixed spice.
Bring the mixture together with your hands to form a dough.
Roll the dough into a log about 5cm thick, wrap it in cling film & chill in the fridge for 1 hour. (The dough can now be frozen for about a month.)
Get 2 baking trays ready & line with parchment paper if necessary.
Remove the dough from the fridge & leave for 5 minutes then unwrap it & slice into 1cm thick rounds.
Place the rounds on to the baking trays.
Bake for 10 minutes. Allow to cool on the tray for a few minutes then transfer to a cooling rack.
The biscuits will keep for 3-5 days in an air-tight container.
