Easy Mac 'n' Cheese

Not calorie friendly I know, so I wouldn't recommend you eat this too regularly! This is my idea of comfort food heaven & made super simple with a cream cheese based sauce.

 

Serves 4 (or 2 with leftovers) Approx £1.12 per person.

Ingredients

  • 250g macaroni
  • 100g plain cream cheese
  • 200g grated cheddar
  • 1 medium onion, finely chopped
  • 6 slices smoked bacon, chopped
  • freshly ground black pepper
  •  1tsp mustard (optional)-whatever you have, just remember English mustard is quite strong! 

In a frying pan cook the onion in a little oil until soft, then the bacon until browned. Set aside.

Cook the macaroni following pack instructions. Reserve a cup of the cooking water, then drain.

Return the pasta to the pan on a low heat, add the cheeses & stir well until melted, then add enough of the pasta water to make the sauce nice & smooth but not too runny!

Season with a good grinding of black pepper, you won't need any salt as there is more than enough in the cheese & bacon!

Stir through the bacon & onions, then pour everything into an ovenproof dish.

Place in the oven at180C for about 20 minutes or until brown & bubbling on top.
