Keema & Potato Curry

Keema means minced meat in Urdu & if you have a pack in your fridge/freezer this recipe is another great way to use it! The tinned potatoes can be kept in your store cupboard & adding them bulks the dish out making it go a little further!

Ingredients

  • 500g beef mince
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 1 tbsp tomato puree
  • 1 tbsp curry powder (depending on strength!)
  • 2 tsp dried coriander
  • 1 tin potatoes, drained
  • 30g frozen peas
  • 1 tbsp plain flour
  • 500ml strong beef stock-use 2 cubes!!

Brown the mince in batches in a large frying pan over a medium heat. Set aside on kitchen paper.

Add some oil to the pan & cook the onion for a few minutes, then stir in the tomato puree & cook for another minute before adding the garlic, dried coriander, curry powder & flour. Keep stirring until you can no longer see any flour.

Add the stock gradually stirring continuously & season with salt & pepper.

Once all the stock is in add the mince & allow to simmer for 5 minutes. Check the seasoning.

Add the potatoes & peas, stir then simmer for a further 15 minutes.

Serve.
