This sandwich is a meal in itself! I've stated that serves four people & it will easily do that, however if you are greedy (like me!) & you can find one other greedy person to share it with then go for it-just don't plan anything too strenuous afterwards!
I buy jars of pesto & sundried tomatoes form shops like Home Bargains or Lidl as they are much cheaper & a useful addition to your store cupboard.
Serves 4 (or see above!) Approx 75p per person

Ingredients
2 small chicken breasts (or 1 large one)
1 large “ready to bake” Ciabatta loaf
2tbsp mayonnaise
2tbsp green pesto
3-4 sundried tomatoes, roughly chopped
1 large egg, beaten
2tbsp dried breadcrumbs
2tbsp plain flour
Cook the Ciabatta according to pack instructions. Allow to cool.
Slice the chicken breast in ½ horizontally to make 2 thin pieces.
Place the chicken slices between 2 sheets of cling film & even them out a little with a rolling pin by bashing them.
Heat some oil in a large frying pan over a medium heat.
Coat each piece of chicken first in flour, then egg & breadcrumbs & fry until golden on each side (about 2 minutes each side). Drain on some kitchen paper while you prepare the bread.
Slice the loaf in ½ lengthways.
Mix the mayo & pesto together & spread over each piece of bread.
Place the chicken on the bottom piece of bread & top with the sundried tomatoes. Put the other piece of bread on top then slice into 4.
Serve immediately or can be eaten cold.
