Ingredients
Rub the flour & butter together until you have a breadcrumb consistency. Stir in the egg yolk, cheese & rosemary & bring the mixture together to form a dough.
Alternatively put all the ingredients into a food processor & blitz together to form the dough.
Knead briefly on a lightly floured surface then divide the mixture into two. Form each portion of the dough into a log approx 4cm in diameter.
Wrap each log in cling film & pop them in the fridge for about an hour.
Heat the oven to 180C/160 Fan/Gas 4. Remove the dough from the fridge.
Using a sharp knife, slice the logs into rounds about 1cm thick & place on a baking tray lined with baking paper. Leave a gap of about 3cm between each round.
Bake in the oven for 20 minutes until lightly golden.
Cool on wire rack. The biscuits should keep for about a week in an airtight container.
