One of my favourite things to eat as a kid was Batchelor's Savoury Rice! We usually had it on a Saturday with beefburgers or those lovely Steak Grill things that were probably not steak at all! I decided to have a go at making my own version & after a few attempts I got it right & just the smell brought back memories! This is the kind of side dish that goes great with pretty much anything!
To make it easier & quicker I have used microwavable rice, but it still won't break the bank!
Serves 4 Approx 64p per person

Ingredients
1 250g pack microwavable rice (long grain or basmati is fine)
1 red pepper, diced
1 yellow pepper, diced
125g mushrooms, sliced
1 bunch spring onions, sliced
300ml veg stock
1 tsp turmeric
salt & pepper
Heat about 1 ½ tbsp olive oil in a large frying pan over a medium heat.
Add the peppers & cook for about 5 minutes until starting to soften, then add the onions & mushrooms.
Once all the veg is nice & soft & slightly coloured stir in the rice & the turmeric making sure everything gets coated.
Pour in the stock & season with salt & pepper, stir & allow to simmer for 8-10 minutes.
Serve.
